Prof (Dr.) Abd Elmoneim Osman Elkhalifa

He is a full Professor of Food and Nutrition at College of Applied Medical Sciences, University of Hail, KSA. He is an active researcher in the field of food and nutrition. His main research interests include investigating the effects of several traditional Sudanese processing methods on sorghum proteins/starch and their functional and physicochemical characteristics. He is particularly interested in the structure of sorghum storage proteins (kafirins) and how to employ them based on their specific features. Currently, he focuses his research on the role of nutraceuticals in human health and how they can assist in treating some of the most serious health problems. He has authored over 70 publications on food and nutrition.  He is the Editor of the Asian Food Science Journal and a member of numerous editorial boards of journals. As a book editor, he has contributed to more than five B P International books.
